Cauliflower, broccoli and stilton soup

Instructions

1.  Make your vegetable stock

2.  Heat the oil in a saucepan and add the onions. Cook on a medium heat until soft.

3. Add celery, leek, potato and a knob of butter. Stir until melted, then cover with a lid. Cook for 5 minutes.

4.  Add the vegetable stock.  Cook for 10 – 15 minutes until all the vegetables are soft.

​

5.  Add the broccoli and cauliflower.  Cook for 7 minutes.

 

 

 

 

 

6.  Use a blender.  Mix until smooth.

 

 

 

 

 

7.  Stir in the stilton

 

 

 

 

 

8.  Season with black pepper
